Don a specialty food of Quang Ngai, Vietnam. It is similar to baby clam but its shell is in yellow or light black. In Vietnam, Don only occurs in 2 big rivers in Quang Ngai province: Tra River and Ve River. Don lives in the rivers, at the mouth of the rivers, and on the river banks. They are abundant at the river mouth. Don lives under the sand so that it is difficult to catch them. Catching Don is a hard work, it needs experience, skill, and patience.




    Don is a valuable gift from the 2 rivers in Quang Ngai to local people. This species could not be farmed. Coming to Quang Ngai during the Don harvest season, do not miss a big chance to enjoy the delicious dishes from Don such as Don salad, Don porridge with sesame, Don soup with young green small watermelon, Stir-fried Don and Vietnamese rice cracker.

    The most famous dish from Don is Don soup. To cook this dish, wash Don carefully in several changes of water, soak them in water used to wash rice for a half day to remove dirt inside Don. Boil Don with water and a little salt. The ratio of water to Don is 2:1. When the water boils, use chopsticks to stir Don so that they open their mouths. Separate the Don broth and Don. Season the broth, separate Don meat from their shells using a basket, add Don meat to the broth and cook until boiling.




      A portion of Don looks simple with a bowl of Don soup which consists of opaque broth, a few tiny Don meat, onion, shredded one-sun-dried rice paper (optional) and topped with green onion, ground black pepper. To eat, break the Vietnamese rice cracker into small pieces and put them into the bowl of Don soup, add some chili pepper, then eat with a spoon. You can use a piece of rice cracker to get Don meat instead of the spoon, dip in fish sauce and eat the cracker and Don meat together. The sweet-tasty, tender, a little crunchy Don meat, the rich broth, the pungent onion, sticky and tender rice paper and crispy rice cracker mix wonderfully. Don soup with rice cracker can warm your stomach and make you refreshing.
