Fried wild mouse with lemongrass and chili pepper

Have you ever heard Vietnamese people like eating mice. In Mekong Delta of Vietnam, there are many wild mice living in caves in rice fields and eating rice, snails, sprouts. During the harvest season, these mice are plumpy, their skins are smooth and their meat is very tasty. Local people just dig the caves or set traps to catch the mice. The reason why Fried wild mouse with lemongrass and chili pepper is that the mice in Ca Mau in harvesting season from October to November in the lunar calendar are as big as a human wrist and outstandingly tasty.

After preparing, the mouse is drained off, burned in a fire, then marinated with minced lemongrass and chili pepper, salt, fish sauce, sugar for about one hour. Then fry over medium heat until crispy, fragrant and yellow. The dish is crispy outside but tender and a little chewy inside. The typical smell of mouse meat blends well with the smell of lemongrass. The dish is salty, sweet and hot. It should be served hot so that it is still crispy and smelling.
