Bún riêu is a Vietnamese meat rice vermicelli soup. Its smell is awful to strangers but don’t be afraid — it has great flavor and that’s the soul of this dish. This Saigon street food’s specialty is that freshwater paddy crabs are used as main ingredients. These crabs are easily fished in rice paddies in Vietnam. Then they are cleaned carefully so that the dirt and sand must be removed. The cook pounds the clean crabs with the shell on into a fine paste. The paste is strained to get the crab liquid which is the base for the soup along with tomato paste.
The attractive color of the soup base comes from annatto seeds. This dish is rich in nutrition: calcium from the ground crab shells, iron from the congealed pig’s blood, and vitamins and fiber from the vegetables.
