Vietnamese mini pancake (Bánh căn) – specialty food of La Gi, Binh Thuan

Vietnamese mini pancake (Bánh căn, Can cake) is popular in Central Vietnam. There are some versions of mini pancake in Phan Thiet, Nha Trang, Binh Thuan and other provinces. Coming to La Gi Town, with less-known beautiful beaches, visitors have chances to enjoy the wild nature, great seafood, lots of traditional cakes and soup cakes.

La Gi Can cake is a unique food, “Bánh căn” refers to the simple tiny rice cake and also a portion of the cakes, sauces, toppings and vegetables. In La Gi, they eat the cake with Braised fish with tomato which is also called tomato sauce with fish, julienned green mango, carrot and daikon pickles. The sauce is usually topped with pork meat balls, boiled eggs, Vietnamese beef roll. The perfect mix of the foods satisfies the taste of the most difficult foodies.

Ingredients for making mini pancake: steamed rice, rice.

Ingredients for making sauce: garlic chives (green onions), garlic, eggs, pork, scallions (onions), black pepper, salt, sugar, fish sauce, cooking oil.

Vegetables and pickles: green mangoes, daikon and carrot.

How to make Vietnamese mini pancake (Bánh căn)?

In order to make the batter, they soak steamed rice and rice in water overnight. Then ground the mix of water, steamed rice and rice until the mix is smooth. The rice batter is stirred every 15 minutes.

La Gi people use a special terracotta pan with mini holes, on which are placed mini terracotta “pans”, covered with mini terracotta lids.

When the pans are hot, the chef pours the rice batter into a pan, the cover it with a lid. Do the same with other pans.

The chef knows when a cake is ready, open the lid, use a special aluminum spatula to remove the cake from the mini pan. She fills the pan with rice batter and closes the lid of the pan.

The ready cake should be crispy amazingly at the bottom and tender inside although there is no cooking oil.

In order to make the tomato fish sauce, they cook seawater fishes, pork meatballs, ground tomato meat until the the fish is tender. The sauce is topped with chopped green onions and crispy scallions. They also add eggs, chewy, crunchy, sticky and tender Vietnamese beef roll to the sauce.

How to eat Banh can?

Vietnamese people usually eat Can cake with chopsticks. Get the mini pancakes and dip it into the sauce. Eat the cake with the meat, pickles, mango juliennes, eggs, fishes, etc. The sweet and sour, crispy pickles and mangoes make the food less greasy and add freshness to the savory sauce.
