Silverside salad (Goi ca suot)
Silverside (Cá suốt) is a kind of fish which has long, thin body, golden scales, bright eyes, a little bigger than a human finger. This fish can be found in the ocean of Central Vietnam. Vietnamese fishermen use nets to catch this fish. They use this fish to cook various delicious dishes such as Sweet and sour soup, Hot pot with silverside, and Silverside salad. Silverside salad (Gỏi cá suốt, Goi ca suot) is one of the must-eat dishes in Phan Thiet. Many members a family or friends usually gather to prepare and cook it quickly.
To make the salad, choose freshly-caught fishes, remove scales, fins, organs of the fishes, cut each fish in half, remove bones carefully to keep the flesh nice-looking. Soak the flesh in water for 5 minutes, drain off and put the flesh into a freezer. Mix the fish flesh with lime juice until the flesh turns white. Squeeze the flesh, mix it with a dressing made from fish sauce, sugar, chili pepper, shredded green mango, onion, minced herbs. It is not too easy but not too difficult to cook Silverside salad. One of the most important steps is choosing fresh silversides for the dish. Stale fishes will ruin the dish. The cook should follow a suitable ratio of spices so that the dish is sweet, sour and salty enough.
Silverside salad is served with a sauce made from soybean sauce, chili paste, mustard, vegetables (ambarella leaves, young Brassica integrifolia leaves), herbs (coriander, shiso, Enydra fluctuan), toasted peanuts, Grilled girdle cake. To taste the Silverside salad to its fullest, diners should eat it in the right way. Put some salad, vegetables, herbs, broken Grilled girdle cake into a small bowl. Then pour the dipping sauce into the bowl and eat. The more herbs the diner add to the bowl, the more delicious the dish is. The more quickly the dinner eats, the tastier the dish is. The dish is very rich in nutrition and healthy. Silverside salad is worth a try.
