Salad with pomelo and shrimp

Vietnam has a lot of salad recipes including famous Lotus Stem Salad, Beef Jerky Salad, Banana Blossom Salad. Most Vietnamese salads are light, fresh and healthy with lime juice dressing. Pomelo fruit is popular in Vietnam for strong nutritional value including its vitamins, minerals, and organic contents like vitamin C, potassium, dietary fiber, vitamin B6, and magnesium. Juicy sweet and sour pomelo flesh is a perfect ingredient to make a refreshing and flavorful salad. Not less delicious than any salad in the country, Vietnamese salad with pomelo and shrimp is a great dish that any traveler should not miss.

Main ingredients are shrimp, pomelo, peanuts, deep-fried shallots, herbs (cilantro, mint, coriander), lime. The first step is getting pomelo flesh out of its skin and separating the flesh into small piece. The cook should be careful and skillful to make a beautiful hemisphere bowl from pomelo peel. Shimp is boiled and peeled. Carrot is julienned and drained. Boiled shrimp, pomelo flesh, herbs and a dressing made from lime juice, sugar, salt and chili pepper (optional) are mixed well. The dressing should play off all of the main ingredients.

The salad is served in the bowl from pomelo peel, topped with peanuts and deep-fried onion. It is usually decorated with some boiled shrimp and nice flowers made from a red chili pepper. Vietnamese people usually eat this food with prawn crackers (Banh Phong Tom). Just use chopsticks to put some salad onto crispy prawn crackers, then tuck in to feel the amazing taste. One of the highlights of this food is the freshness of pomelo and herbs. In addition,  The salad contains five tastes: the sour taste of pomelo flesh and lime juice, sweet taste of of pomelo flesh and sugar, salty taste of salt, hot taste of chili pepper and bitter taste of pomelo skin.
