History of Bun Quay Kien Xay Restaurant
Bún quậy (Bun quay, Stir noodle soup) which is literally means Noodle stir is a Phu Quoc local food. According to our family, Bún tôm (Bun tom, Shrimp noodle soup) which is originated in Central Vietnam was sold in Phu Quoc from 1955 to 1996. The ingredients and recipes of Bun tom are simple and easy. From 1996 to 2012, only our family sold Stir noodle soup in the island.
We had changed the recipe for several times to meet the tastes of local people and visitors. We use fresh ingredients such as shrimps and squids which are caught in Phu Quoc. We have introduced a creative way to eat the food with a sweet, savory and sour dip. Phu Quoc people call the food Bún quậy. It is the story about how Bún quậy was created by our family.
Before 2015, we do not have any signboard. Local people call our restaurant by the name of the food – Bún quậy or Bún quậy Phú Quốc. More and more restaurants have opened and served this kind of food since 2015. In order to distinguish our restaurant from the others, we named it Kiến Xây.
Today, Bún quậy has become popular in many regions of the country. Vietnamese chefs have created many versions of Stir noodle soup.
We are sad and laugh at the same time because owners of some younger Stir noodle soup restaurants said we were dreaming that we bore Bún quậy.

Kiến means opinion, idea, innovation; Xây means build, develope.
Kiến Xây literally means aunts build nests.

Bun Quay Kien Xay Restaurant
Bun Quay Kien Xay Restaurant – Phu Quoc 1 at 28 Bach Dang Street has a blue and black facade. Green trees provide shade for the restaurant and motorbike parking.
A corner of the restaurant is designed beautifully, with paintings, lights on a dry branch, short round wooden table.
The restaurant is rather spacious and well-ventilated thanks to wide doors and windows. A huge clock with Roman numbers and ceiling lights make the restaurant warm and cozy.
The area where customers mix the dips themselves from salt, chili, sugar, monosodium glutamate, kumquat juice.
How to make the special dip?
If you come to the restaurant for the first time and do not know how to make the dip in a proper way, you can get the ready mix.
Sugar, monosodium glutamate, kumquat.
Customers ground chili themselves.
A soup spoon should be mixed with juice of 2-3 kumquat fruits.
This special dip is sweet, sour, salty and spicy at the same time.
How to eat Bún quậy?
Firstly, customers pay at the cashier, then get the portions in the kitchen. Bowls contain ground shrimps which turn into shrimp cakes after blanching in boiling water.
A bowl of Stir noodle soup consists of noodles, squids, shrimp cakes, chopped green onions.
Step 1: Get a spoon of the salt, sugar, sugar, monosodium glutamate mix.<br>Step 2: Squeeze 2-3 kumquat fruits and put the juice into the dip bowl, then stir, stir, stir… That is the reason why we call it Stir noodle soup<br>Step 3: Add a spoon of the dip to the bowl of Stir noodle soup.<br>Step 4: Dip noodles and toppings in the dip. Some diners prefer to pour a little of the dip over noodles, squid or shrimp cakes before eating.
