Clear rice noodle soup (Hủ tiếu nước)
Coming to Sau Sen Restaurant, you have two choices: dry (khô) or soup (nước). There are two versions of Hu tieu: Clear rice noodle soup (Hủ tiếu nước) and Mixed clear rice noodle (Hủ tiếu khô, Hủ tiếu trộn).
A portion of Clear rice noodle soup (Hủ tiếu nước) consists of vegetables (bean sprouts, lettuce), clear rice noodles, pork bones, pork intestines, dried squids, sausages, chopped green onions and clear broth.
Mixed clear rice noodle (Hủ tiếu khô)
Instead of pour the broth over Hu tieu noodles, vegetables and meat toppings, the cook add a special sweet and salty sauce. Then serve the bowl with a separate rice bowl of broth. When eating, the diner mixes everthing in the bowl so that the sauce plays off the noodles, eat the mixed clear rice noodle while slurping the broth. They call the dish Mixed clear rice noodle (Hủ tiếu khô).
